Unlike most Ausbildungen in this guide, Hotelfachmann/-frau is built around breadth rather than specialisation — reception and reservations, housekeeping standards, food and beverage service, basic accounting, and increasingly event management and sustainability practice. The newer Ausbildungsordnung specifically added digitalisation content, reflecting how much hotel operations now run through booking and management software.
Pay is set regionally through DEHOGA/NGG tariffs rather than one national scale — the Berlin figures above are a real, current example, but expect variation by state and employer size. A food-handling health certificate (Gesundheitsamt Belehrung) is a standard, inexpensive requirement before you start, and weekend and shift work is the norm, not the exception, in this trade.
